My Meteohub rebooted for some reason this morning at 6:25am and it is not logging data since.

The weird this is that the 'uptime' says 16 hours 17 minutes, but the 'messages' log says that it restarted at 6:25am which is only 1 hour 30 minutes ago.

My Meteohub is not set to reboot by itself in software.

Running eBox-3300 v4.1e

Probably an obvious question, but have you tried rebooting again? Perhaps a power fluctuation caused a hiccup in the memory, and a cold-restart will clear it.

The PC itself did not reboot as it's 'uptime' was still over 16 hours, where as my Meteohub software 'did something' at 6:25am this morning and started a new system log.

Power should not be an issue, as I run all components on a UPS with battery backup.

Before I left the house this morning I did perform a reboot and things are working again for now.
