In case anyone has my situation where your weather display can't be conveniently connected to your NSLU2 near a swith or router. I found an easy solution. I had a few Netgear WNCE2001 bridges laying around that I used to use to connect my directv boxes. The product link is here

You simply have to assign an IP address to these boxes and associate them to our WLAN. Then jut connect the Ethernet port on the bridge to the Ethernet port on the NSLU2. No changes are needed on the meteohub device. I've had it up and running for 6 hours now with consistent updates to wunderground.
Since its jut acting like a client bridge I'd imagine they will work with any meteohub device with an Ethernet port
