My Meteohub is connected to an Apple AirPort Extreme. I use AirPort Utility (5.5.1) to do the basic setups for the router. I can get to the Meteohub System Information when my Mac is connected to the AirPort but not when I'm connected to the internet through a different router. What are the specific steps and AirPort Extreme settings for doing this? My knowledge of networking is very limited so please be as specific as possible, and I'll be glad to provide any other pertinent information.

If you have two routers in your local network, and they have different LAN addresses, you can't route to the 2nd LAN from the first. Example: AE LAN is 192.168.1.1, and the other router LAN is 192.168.0.1
One way around that is to make one router as primary, and connect the 2nd router in a LAN to LAN configuration. On primary router, change DHCP range to exclude 192.168.x.2, then on secondary router, change LAN address to 192.168.x.2 (where x=octet of first router LAN address), disable DHCP, and connect patch between LAN ports on the two routers.
Another option would be to replace the 2nd router with a switch (which the LAN to LAN config essentially does).
